Stainless Steel Grades for Grill Accessories: What 304 Actually Buys You

Grill accessory listings lean hard on the words stainless steel, but stainless is a family, not a material. The three grades you meet in this category behave differently in exactly the two conditions a grill basket lives in: high heat and wet cleanup.
430: the cheap ferritic option
430 contains chromium but effectively no nickel. It resists rust in a dry kitchen and does poorly in a damp outdoor one. It is magnetic, which is the easiest way to spot it. On a basket that lives on a patio, 430 mesh typically shows orange speckling at the weld points inside a season.
201: the substitution grade
201 swaps expensive nickel for manganese and nitrogen. It is stronger than 430 and cheaper than 304, and it is the grade most often behind an unqualified 'stainless steel' claim. Its weakness is chloride: salt, marinade and dishwasher detergent all pit it faster than 304.
304: the one worth paying for
304 is roughly 18 percent chromium and 8 percent nickel. The nickel stabilises the passive oxide layer that keeps the metal from corroding, and it keeps the alloy stable across the temperature swings a charcoal grill produces. On grill hardware it is the practical baseline for something you expect to own for years rather than seasons.
How to tell what you have
- Magnet test: 304 is weakly magnetic or non-magnetic; 430 pulls firmly. 201 sits in between, so this is a screen, not a verdict.
- Read for the number. A listing that says 304 in the bullet points is making a claim you can hold them to; one that says only 'stainless' is not.
- Look at the welds. Cheap grades discolour at weld points long before the flat mesh does.
- Check the rim. A rolled or reinforced stainless rim signals a manufacturer who spent money on the part that carries load.
Why the grade matters more on a basket than a spatula
Wire mesh has an enormous surface-area-to-mass ratio. There is very little metal in each strand, so corrosion that would take years to matter on a thick tool eats through a strand comparatively fast. Mesh also has thousands of weld intersections, and welds are where corrosion begins. The same alloy that is fine as a tong is marginal as a mesh.
Heat, not just rust
Charcoal grates routinely pass 300°C at the surface. At those temperatures thinner, cheaper alloys lose temper and take a permanent set — the classic warped basket that never rolls smoothly again. 304 holds its shape through repeated cycles, which is why the difference shows up as geometry, not just colour.
Non-stick coatings on stainless
A coating on top of good steel makes cleanup easier. A coating on top of bad steel hides it. Coatings on grill hardware are consumables: they thin over dozens of high-heat cycles. Judge the metal underneath, because that is what you will still be using in year three.
The short version
If a basket names 304, keeps its rim rigid and does not bow under a full load, the metal is not your problem. If a listing says only 'stainless steel' and undercuts the field by half, you are buying a season, not a tool.
