Every basket in this category looks the same in a listing photo. These are the six checks that actually separate them.
1. Rim rigidity beats everything
A basket is only as good as its end rings. If the rim flexes, a full cylinder bows in the middle, stops rolling cleanly and starts skidding — which means one face keeps facing the fire. Press the empty rim between finger and thumb: if it gives, the loaded basket will too.
2. Mesh gauge and aperture
You want apertures small enough to hold a shrimp tail and open enough for smoke to pass. Very fine mesh blocks airflow and steams food; very coarse mesh recreates the problem you were solving. Thicker wire holds shape through heat cycles.
3. Steel grade
Look for 304 stainless named explicitly. Unqualified 'stainless steel' usually means 201 or 430, which pit faster in wet outdoor use and take a permanent set at charcoal temperatures.
4. Capacity and diameter
Diameter matters more than length. A narrow tube packs food solid and it slides instead of tumbling. Aim for a cylinder you can fill two-thirds and still see space for food to move.
5. Handle and end cap
The end cap should seat one-handed while you are wearing a glove. Removable handles are convenient for storage and a nuisance mid-cook. Decide which one you actually care about before you pay extra for it.
6. Where you buy changes what you get
